Understanding Cookware Thermal Physics
When selecting cookware, three thermal properties dictate culinary performance:
- Thermal Conductivity: How rapidly heat travels through the metal. Copper and aluminum conduct heat 5x to 10x faster than stainless steel or cast iron.
- Volumetric Heat Capacity (Thermal Mass): The amount of thermal energy a pan retains. Thick cast iron absorbs enormous heat energy, meaning it doesn’t cool down when a cold 500g ribeye steak is dropped into it.
- Chemical Reactivity: Stainless steel and enameled iron are 100% non-reactive with acidic tomatoes and wine, whereas bare cast iron and carbon steel leach iron and strip seasoning under prolonged acidic simmering.
